Merry Christmas you filthy animals!
I cannot believe it is already Christmas! I have been looking forward to the holidays all year, since my two year old is finally able to participate in some of the Christmas festivities! One of our traditions is to take a picture with the creepy mall Santa. As we waited in line, I watched all the children screaming, crying and picking their noses on Santa’s lap… Doesn’t it just really get you into the holiday spirit?!
My son also helped me with setting out cookies, along with putting out a special beverage for Santa, and no, it wasn’t milk!
Let’s get serious for a minute and talk about this marg…
Coconut – you either love it or hate it. Personally, I enjoy it and I was interested in this recipe when I saw it called for coconut milk. This does have a tropical flavor but I love the appearance, as it looks just like snow!
The White Christmas Margarita
- Cranberries and lime wedge for garnishing
- Sugar for glass rim
- 1/2 cup Lime Juice
- 1 can Coconut Cream (14 oz)
- 12 oz Silver tequila of your choice
- 8 oz Triple Sec
- 2 cups Ice
- Additional simple syrup, if needed
- Combine coconut milk, tequila, triple sec, lime juice and ice in a blender. Blend until smooth.
- Add simple syrup to taste*
- Rim glasses with lime wedge and dip into sugar. Pour into glasses and garnish with lime and cranberries.
I found this recipe while searching through Pinterest. It was posted by http://www.delish.com and makes enough for about 6 people.
*The first time I made used recipe I used Unsweetened Coconut Milk… Yuck! It definitely does need a touch of sweetness. So be sure to use Coconut CREAM which happens to be much sweeter. It might not be a bad idea to have some simple syrup on hand just in case, add just a splash for a little extra sweetness to each margarita, that is if it’s too tart for your liking.
On Thanksgiving, I posted on my social media pages a recipe for a Cranberry Margarita. That would also be suitable to enjoy on Christmas day.
I hope you are able to spend the holidays with the ones you love most. (…you’re blender and salt shaker!) But depending on where you are spending the holidays, you may need to drink numerous, and I mean LOTS of Margaritas. It will be nice to change up the flavors from coconut to cranberry!
